Eve's Raspberry Streusel Muffins For Empowerment

For the muffins:

2 cups + 1 Tbsp flour

3/4 cup sugar

1 tsp lemon zest

1/4 teaspoon salt

2 tsp baking powder

1/4 baking soda

2 eggs, large

3/4 cup plain yogurt or sour cream

8 Tbsp butter, melted

1 tsp lemon or vanilla extract

2 cups raspberries

For the streusel:

1/2 cup flour

1/4 cup brown sugar

1/4 cup sugar

Dash of salt

4 Tbsp butter, room temperature

Preheat oven to 425 degrees Fahrenheit. Line a muffin tin with paper liners and set aside.

In a large bowl, use a wooden spoon to mix the 2 cups of flour with all the other dry muffin ingredients while chanting,

A cup of that, a cup of this. With each stir, I raise the partaker’s confidence.

After stirring the mix three final times, set it aside to build its potency.

Then, in a medium bowl, whisk the two eggs. Add the rest of the wet ingredients to the eggs, stirring gently. Use a spatula to softly fold the wet ingredients into the bowl with the dry ingredients. With each sweep of your spatula, say,

Into the mix, I fold in the rest. Blend the magic together so we’ll be at our best.

Add the tablespoon of flour to the raspberries and mix to combine. Fold the raspberries into the batter bowl gently.

Scoop the batter evenly into the muffin cups. Set aside and cover with a tea towel to let the magic seep in.

In a small bowl, mix the dry streusel ingredients. Cut the butter into the mixture using two forks. When the texture resembles large crumbs, sprinkle the desired amount onto the tops of each muffin.

Bake muffins for 20 minutes or until an inserted toothpick comes out clean. Place the same tea towel used to cover the mixing bowl down on the counter with a wire rack on top of it. Let the muffin pan cool completely on top of the wire rack, allowing any residual magic to rise into the muffins. When cool, enjoy!
